OPEN position : sous chef
POSITION SUMMARY
The Sous Chef is a key part of the success for food service operations at all Dear Mama Coffee locations. In this role, the Sous Chef supports the Executive Chef by ensuring the culinary vision is upheld at each shop in all daily kitchen operations. As an emerging brand coffee bar / all day cafe brand, Dear Mama seeks a sous chef with kitchen experience as well as administrative capabilities. Daily hours may involve early mornings or late nights, and the ideal candidate will contribute to creating the schedule and staffing--so you will be part of the conversation about the best back-of-house operational support for the brand.
Job Responsibilities:
Assisting Executive Chef with recruiting, training and managing kitchen personnel
Create weekly staffing schedules and hold team accountable to performing the tasks as laid out efficiently and professionally
On board kitchen personnel using build sheets, recipes and back-of-house materials and troubleshoot daily operational issues with shop management as needed
Uphold quality and food safety standards, and presentation techniques and work to instill similar disciplines into new kitchen hires
Work with Executive Chef on recipe development, costing, and product orders for all specials, seasonal menu changes, event catering needs and more as needed
Coordinate daily transportation with shop General Managers of product safely and timely between all locations including an off-premise commissary kitchen
The Sous Chef will be required to work the line at shop locations as needed; as well as lead back-of-house operations for restaurant buyouts and off-premise catering

Is adept at the administrative side of kitchens; including but not limited to Microsoft Office, Google Drive, costing, and email communication.
Has experience working with vendors and negotiating best pricing.
Thrives working in changing environments; with the capacity to create stability and accountability for the culinary team.
Must have graduated from culinary school, and possess 2-3 years of work experience in a professional kitchen.
Must hold a valid NYCDH Food Handler’s Certification.
This is a full-time position for an emerging coffee bar brand with two locations (East and West Harlem), and a commissary.
